Make two-ingredient banana pancakes and spoil your father

WANT to make something sweet and delicious for daddy this Father’s Day? Funmammasa blogger Judy MacGregor, a mother of seven, has shared how you can spoil daddy.

She is a busy mom looking after her kids while making it fun for them, with different activities and recipes for them to do.

“I’ve been wanting to try the two-ingredient banana pancake. It was easy to make and they are both glutenand dairy-free,” said MacGregor.

Vegetable oil

2 large eggs

1 ripe banana (medium size)

Method

Peel and mash your banana in a small bowl.

Crack both eggs and pour them into the banana. The batter will be funnier than a normal pancake batter.

Heat the pan with a little oil. (She uses an olive oil spray)

Drop the batter in small balls. They will cook better this way and be easier

to flip. This should make 5 to 8 little pancakes. Cook until golden brown.

To garnish she added a few jam eyes and cinnamon. She found this was sweet enough and didn’t need much more although a drizzle of syrup or honey would be extra delicious.

You could also add cocoa or nuts to your batter as a variation.

She used cutters to get the chicken and bunny shapes.
