A yummy recipe for kids who won’t eat breakfast

STAY-at-home mother Heather Step has shared some mouthwatering oats and ProNutro crunchies recipes.
She founded South African Mom Blogs and lives in Joburg, with her husband, little Nicky, and their two dogs.
This is a great recipe for those with kids who won’t eat breakfast and are addicted to biscuits.
Ingredients:
• ½ cup sugar
• 125g margarine
• 1 dessert spoon syrup
• 1 tsp bicarbonate of soda
• 1 tbs boiling water
• 1 cup ProNutro
• 1 cup oats
• 1 cup flour
• 1 egg
Method:
1. Melt the margarine and add sugar and syrup
2. In a separate dissolve the bicarb in the boiling water
3. In a separate bowl, mix the ProNutro, oats and flour
4. Combine ingredients and the egg
5. Press in a pan and bake at 180°C for 15 minutes
With winter knocking on the door, she has also shared a recipe for pumpkin fritters. “I have fond memories of my mother making this recipe and the smell of cinnamon wafting through the air. This is a tasty way to eat pumpkin. They can be eaten warm or cold, although warm is such a treat for a cold night’s dessert. The pumpkin can be replaced with butternut and for a low-carb/Banting option you can replace flour with coconut flour and the sugar with xylitol. It also makes a yummy lunch box treat for your children,” said Step.

Ingredients
• 500g pumpkin (pre-cut is easier)
• 2 eggs
• 1 cup flour
• 1 tbs sugar
• 1 tsp baking powder
• ½ tsp cinnamon (and some more for sprinkling over later).
• Oil for frying
Method
1. Steam the pumpkin, drain off as much water as you can and mash it
2. Beat the eggs and add them
3. Add the flour, sugar, cinnamon and baking powder
4. Fry dessert spoonfuls of the mixture in shallow oil. They are ready to turn when you see little bubbles forming
5. Drain on paper towels
6. Sprinkle cinnamon over.
